JAKARTA, KOMPAS.com – Unilever Food Solutions completed the culinary trend entitled “Future Menu 2024” by involving more than 1,600 professional chefs, supported by 56,000 keywords and two billion searches in 21 countries.
Previously, there were eight global culinary trends released by the business-to-business (B2B) product sales company.

However, after identifying trends that are relevant to culinary culture in Indonesia, there are only five Indonesian culinary trends for 2024 that will be introduced in Indonesia.
“As much as possible, we are bringing this culinary trend closer to Indonesia. So, it doesn’t feel too global or too western,” said Managing Director of Unilever Food Solutions Indonesia, Gemita Pasaribu during the Future Menu 2024 press conference at the Fairmont Hotel Jakarta, Central Jakarta, Monday (4 /11/2024).
Gemita did not reveal how long this research took. What is certain, he said, is that creating culinary trends takes a lot of time and involves many people.
The release was not simultaneously global. In Indonesia, Unilever Food Solutions has regularly issued culinary trend reports approaching the Eid holiday since 2022.
“Usually, in March it is released in Europe first, then it goes to Asian countries. It took a while (to enter Indonesia) because we wanted to adapt to Indonesian culinary delights,” said Gemita.
Unilever Food Solutions targets culinary activists to dig deeper into food trends every year.

1. Explore new flavors
Titled “Flavor Shock“, Unilever Food Solutions through a survey by WGSN saw that young consumers in Asia Pacific, including Indonesia, are interested in trying a variety of unique food flavors.
“Young people are really curious and try to compare (food). We are also trying to present this global trend in Indonesia,” said Gemita.
According to research from Innova Market Insights, Indonesian consumers are increasingly prioritizing culinary experiences that are more complex and memorable.
It can be seen in the way the younger generation shares culinary experiences on social media, creating viral trends that are tastefully and visually appealing.
An example of a dish illustrating this trend is betutu grilled ribs, served with claypot or clay containers.
“The concept, east meets west. “The sour and spicy taste of grilled ribs, marinated with Balinese spices, complete with chili sauce,” explained Gemita.
