4 Ways to Make Delicious Lontong that Doesn’t Get Soft Easily


KOMPAS.com – Lontong is an alternative method of eating rice in a different way.

Lontong is usually made during Eid al-Fitr as an accompaniment to typical dishes, such as chicken opor.

However, lontong can also be made outside of Eid al-Fitr, for example during the Christmas and New Year holidays which are cold due to the rainy season, so it is suitable for eating lontong opor. The dense texture of lontong is sure to be a favorite for anyone who eats it.

Therefore, there are several tips for making lontong that is dense and doesn’t get soft quickly:

1. Use good quality rice

How to make lontong is actually quite easy. However, so that the results are fluffier and denser, use quality rice.

Don’t use para rice because it can make the lontong texture crumble easily after cooking. The type of rice you can use is, for example, IR 64 or mentik.

2. Aron rice first

Rice for lontong should be cooked first so that it cooks quickly. The aroning process can also make lontong fluffier, denser and longer lasting.

If you don’t know, the aron technique is a way of cooking rice by soaking it in water and then steaming it until half cooked. After that, the rice is cooked according to the recipe.

3. Don’t fill the lontong completely

When making lontong, don’t fill in too much rice. Once cooked, the rice will expand and compact the wrapper.

In order to prevent the lontong from disintegrating, fill the rice with about a third or half of the wrapper.

4. Boil in a standing position

The time for boiling or steaming lontong depends on the pan used. Therefore, check the lontong regularly to ensure its level of maturity. Once cooked, drain the lontong and cool before cutting and serving.
