Store tomatoes away from materials that emit ethylene gas
In general, one of the best ways to store tomatoes is to store them at room temperature, away from direct sunlight. The goal is to maintain the taste and texture of the tomatoes.
If the tomatoes are not yet ripe, store them at room temperature. Stay away from food ingredients that produce ethylene gas.
“Store tomatoes away from ingredients that produce ethylene, such as apples or bananas, which will speed up the ripening process,” said Dana Peters, produce and flower field supervisor at Whole Foods Market, quoted from All Recipes.
Apart from apples and bananas, other fruits that emit ethylene gas are avocados, kiwis and persimmons. This gas speeds up the ripening process, especially for food ingredients that are sensitive to this gas.

When the tomatoes are ripe, store them with the stem side facing down. This aims to reduce air flow to the stem thereby minimizing the possibility of contact with fungi and bacteria.
