This Chef Doesn’t Recommend Take Away Steak, Why?


KOMPAS.com – Steak generally made from beef, although it can also be made from other types of meat, such as chicken and fish.

Steak beef is made with different levels of doneness, such as raw (rare), semi-raw (medium rare), half-baked (medium), medium well, and mature (well done).

That’s why Gustaf Djaja, Corporate Executive Chef of Justus Steakhouse, doesn’t recommend buying it stake to take home (take away).

“Once we cook the meat, even though it has been removed from the oven, the cooking process still continues,” said Gustaf when met Kompas.com at Justus Steakhouse Asthana Kemang, Tuesday (7/1/2025).

Considering the ongoing cooking process, as long as the steak is still hot, the steak’s level of doneness will continue.

Gustaf said, steak which was previously cooked to medium doneness, can become well done if left to cook aluminum foil which retains heat.

“That’s why it’s not not recommended, but it’s not recommended to wrap it steak because the taste and texture can change,” explained Gustaf.

As for how to warm up steakcan be done by heating it in the oven, like when cooking.
