KOMPAS.com – Choosing the wrong rice can make the fried rice’s texture unpleasant. Can be too soft and sticky when eaten.
There are at least two types of rice based on their texture, namely fluffier rice and pera rice.
Only one of the two types of rice is suitable for cooking fried rice, as stated by Riezaldy Nugraha, Commis de Cuisine Chef of Novotel Karawang.
“If you make fried rice, you have to use a character (type) of pera rice or one that is easy to mix so that the spices come together easily,” said Aldy when demonstrating making beefsteak fried rice to the media at the Novotel Karawang, Saturday (19/10/2024).
According to Aldy, it is difficult to make fried rice using fluffy rice because it will stick to the pan.
Fluffier rice generally has a soft texture and is difficult to separate. So, it will clump if it is forced to be processed into fried rice.
Furthermore, Aldy suggested using cold rice to make delicious fried rice.

Cold rice doesn’t always mean yesterday’s rice. This rice can also be cooked on the same day, then chilled in the refrigerator to reduce the water content.
“For example, new hot rice from rice cooker, “It will be sticky because the water content is much higher than cold rice,” said Aldy.
“That’s why when you make fried rice, generally cool it, store it chillers. When operational (cooking), just removed from chillers and put it at room temperature first,” he added.
Rice is also added last in the cooking process. The order is oil, spices, and rice. After that, stir until the spices are evenly distributed and cooked.
When using toppingsthis topping can be added at the end of the fried rice cooking process.
