KOMPAS.com – The free nutritious meal menu for the second day in Sidoarjo, East Java is orek tempeh.
The following is a recipe for tempeh orek that can be made at home using shallots, garlic, bay leaves, galangal, lemongrass, large green chilies, large red chilies, sweet soy sauce and brown sugar.

Material:
- Tempeh 150 grams, cut into blocks, fried
- 4 red onions, thinly sliced
- 2 cloves garlic, thinly sliced
- Bay leaf 1 sheet
- 1 cm galangal, crushed
- 1 stalk lemongrass, crushed
- 1 large green chili, sliced obliquely
- 1 large red chili, sliced obliquely
- Sweet soy sauce 1 tsp
- Brown sugar 1/4 tsp
- Salt to taste
- Water 50 ml
- Oil 2 tbsp

1. Heat oil, saute garlic, shallots, bay leaves, galangal and lemongrass until fragrant.
2. Add green chilies and red chilies. Stir until wilted.
3. Add sweet soy sauce, season salt, and brown sugar. Stir well.
4. Pour in water. Cook while stirring until it boils.
5. Add tempeh. Cook while stirring until smooth and cooked. Lift and serve.
