KOMPAS.com – You can try Kampung fried rice if you are looking for a spicy but simple breakfast menu.
Its characteristic lies in the white spices and the addition of shrimp paste which gives it a distinctive aroma. Use rice that is cold and hard so that the fried rice doesn’t become lumpy later.

- 2 tablespoons unsalted butter
- 10 grams red onion (thinly sliced)
- 5 grams garlic (thinly sliced)
- 15 grams of shrimp paste
- 3 bird’s eye chilies (finely sliced)
- 10 red chilies (finely sliced)
- 1 egg (beaten briefly)
- 10 grams of sliced spring onions
- 250 grams white rice
- 1/4 teaspoon ground pepper
- 1/4 teaspoon salt
- 1/2 teaspoon instant chicken flavored stock powder
- 1/4 teaspoon granulated sugar
- 1/4 teaspoon flavoring (optional)
- Heat butter in a frying pan over medium heat. Fry the shallots and garlic until aromatic.
- Add shrimp paste, cayenne pepper and red chili. Stir well until the spices are cooked.
- Add the beaten egg and sliced spring onions. Stir until the eggs are cooked evenly.
- Add white rice, pepper, salt, stock powder, sugar and seasoning if you like. Stir well until the spices are absorbed and the rice is cooked perfectly. Remove and serve while warm.
