KOMPAS.com – Approaching the new year 2025, prepare a menu of barbecue and other grills, especially with spread sauce.
You can make a spicy butter sauce with cumin, coriander, red chilies, shallots, garlic and unsalted butter.
Spicy butter sauce can be used as a spread for grilled corn, sausages, or satai for chicken or beef. Can be used at home, store in plastic in the refrigerator.

Material :
- 2 tsp cumin
- 1 tsp coriander
- 1 red chili, seeds removed, finely chopped
- 2 red onions, finely chopped
- 4 cloves of garlic, peeled, crushed
- 100 grams unsalted butter, let soft
- 1/2 tsp fine table salt
- 2 tbsp chopped parsley/cilantro

How to make spicy butter sauce:
1. Roast the cumin and coriander for one minute until they change color. Transfer to a mortar, puree.
2. Put it in a bowl and add the red pepper, shallots, garlic, butter, salt and parsley. Whisk the sauce until combined.
3. If you don’t use the butter straight away, you can shape it into a sausage shape and chill it in the refrigerator, up to two days.
Or freeze in the freezer for up to several weeks. Put the butter solution into a long plastic mambo ice bag, three centimeters in diameter.
Chill in the refrigerator or freeze inside freezer until the butter is used. Frozen butter should be left at room temperature for 20 to 30 minutes before serving.
