KOMPAS.com – Soto Ayam Lamongan is one of the typical Indonesian soto variants, many found in street stalls to restaurants.
You can make your own soto chicken lamongan at home, made with garlic seasoning, hazelnut, turmeric, pepper, orange leaves, lemongrass, ginger, and leeks.
Soto Ayam Lamongan is served with celery slices, fried onions, koya, leeks, and chili sauce.

Material:
- 2 liters of water to boil
- 1 native chicken, coat with 1 tablespoon of lime juice
- 3 tablespoons of oil to saute
- 50 grams of suun, soak with hot water, drain
- 100 grams of cabbage, finely sliced

Spice:
- 10 cloves of garlic, puree
- 5 Candlenut grains, puree
- 4 cm turmeric, burn, puree
- 1/2 teaspoon pepper powder, puree
- 2 tsp salt, puree
- 3 orange leaves
- 2 lemongrass stems, memor
- 2 cm of ginger, memor
Complementary:
- Sliced leeks, sliced celery, fried onions, koya (shrimp crackers, dried shrimp, fried fried garlic), sliced lime.

- Boil the chicken over low heat until tender. Remove and drain the chicken. Shredded meat. Set aside.
- Saute the spices until fragrant. Add orange leaves, lemongrass, and ginger. Stir well. Put the spices in the chicken stock, cook until boiling. Lift.
- Arrange suun, chicken meat, cabbage, and boiled eggs in a bowl. Flush with soup sauce, sprinkle with leeks, celery, and fried onions.
