KOMPAS.com – Tofu stew could be the right choice for a family meal. With rich stew spices, slowly cooked tofu will absorb the sauce until the texture becomes dense and full of flavor.
The following is a recipe for tofu stew with thick and spiced sauce, as reported by the book “Delicious and Delicious Home Cooking” (2021) by Banu Susanto published by Gramedia Pustaka Utama via Kompas.comThursday (20/4/2023).

Material:
- 8 pieces of tofu (halved, fried until brown, drained)
- 2 liters of water
- 8 tablespoons sweet soy sauce
- 3 tablespoons fried shallots
- 1 stalk lemongrass (crushed)
- 10 lime leaves
- 7 cloves
- 6 centimeters cinnamon
- Salt to taste
- Powdered stock to taste
- Oil (for frying)
Ground spices
- 8 red onions
- 5 cloves of garlic
- 2 medium tomatoes
- 2 centimeters ginger
- 5 candlenuts
- 1 tablespoon coriander
- 1/2 tablespoon ground pepper
- 1/2 nutmeg
- Pour oil into a frying pan to heat, then fry the ground spices with lemongrass and lime leaves until fragrant and cooked. Once the spices are cooked, pour in the water and let it boil.
- Add the fried tofu to the spiced sauce. Add sweet soy sauce, cinnamon, cloves, fried shallots, salt and stock powder.
- Boil over medium heat for one hour until the sauce thickens. If the sauce reduces during the boiling process, add water little by little.
- Once cooked, turn off the heat and let the tofu cool so that the texture is denser. Lift, serve.
