KOMPAS.com – The Free Nutritious Meal Program (PMG) simultaneously starts this Monday (6/1/2025). Especially at the Palmerah Nutrition Services Fulfillment Unit (SPPG), West Jakarta, the vegetables served on the first menu are stir-fried long beans.
Basically, stir-fried long beans are easy to make and are often used as an option for school lunches. To make it more complete, you can add shrimp for protein.
If you want to make stir-fried long beans at home, the recipe is from the book “100 Home-style Stir Fry Recipes” Indriani’s work (2014) published by PT Gramedia Pustaka Utama can be imitated at home.

Ingredients for sauteed long beans:
- 150 grams long beans (cut into 5 centimeters)
- 4 pieces of gizzard (boiled and sliced)
- 100 milliliters of water
- 100 grams of shrimp (peeled and cleaned)
- 4 cloves garlic (finely chopped)
- 1/2 onion (chopped)
- 3 red chilies (long slices)
- 1 centimeter ginger (crushed and thinly sliced)
- 2 centimeters galangal (crushed and sliced lengthwise)
- 2 tablespoons sweet soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/4 teaspoon granulated sugar
- 2 tablespoons oil (for frying)
- 2 tablespoons fried shallots

How to make stir-fried long beans:
1. Saute the onions, garlic, ginger and galangal until fragrant, then add the gizzards and shrimp. Saute until the gizzard and shrimp change color.
2. Pour in water and cook until it boils, then add the long beans, salt, sugar, sweet soy sauce, ground pepper and red chili. Cook while stirring until the long beans are cooked.
3. Correct the taste before serving with a sprinkling of fried shallots.
