Recipe for flour fried enoki mushrooms, deliciously use Bangkok sambal


KOMPAS.com – When looking for an alternative snack besides french fries, you can try flour fried enoki.

The savory spices that envelop the enoki, plus the crispy texture makes this snack suitable to be eaten with family. To be more delicious, add a sweet spicy Bangkok sambal.

Material:

  • 2 packs of enoki mushrooms (set aside the roots, shred)
  • 3 cloves of garlic (puree)
  • 1/2 teaspoon of fish sauce
  • 1/2 teaspoon of soy sauce
  • 3/4 teaspoon of salt
  • 1/4 teaspoon of pepper powder
  • 225 grams of medium protein flour
  • 40 grams of rice flour
  • 1 1/2 tablespoon of sago flour
  • 3 Chucky stems (finely sliced)
  • 3/4 teaspoon cake puder or baking powder
  • 200 milliliters of ice water (for dyeing)
  • 300 milliliters of oil (for frying)

Bangkok chili sauce material:

  • 5 large red chili (boiled)
  • 1 clove of garlic (boiled)
  • 1 tablespoon of tomato sauce
  • 1/2 teaspoon of salt
  • 1 1/4 teaspoon of sugar
  • 250 milliliters of water
  • 1 teaspoon of sago flour (dissolve with 1 tablespoon of water)
  • 1/8 teaspoon of vinegar

  1. Mix garlic, fish sauce, soy sauce, salt, and pepper powder. Baluri the mixture to each part of the enoki mushroom. Leave for about 20 minutes.
  2. In a separate container, mix the flour, rice flour, sago flour, baking powderand chuckle. Stir well. Baluri mixture of flour to the enoki mushroom.
  3. Put the enoki mushrooms into ice water, then coat again with flour.
  4. Pour the oil into the pan to be heated. Fried mushrooms enoki until cooked and dry.
  5. Sambal Bangkok. Ulek or blender chili and garlic, but not to be too smooth.
  6. Put the chili mixture and garlic to the pan, add tomato sauce, salt, sugar, and water. Cook and stir until boiling.
  7. Pour water and sago solutions. Stir again until it thickens and pops up. Pour the vinegar. Stir again.
  8. Serve the fried flour with Bangkok chili sauce.
