- 2 bitter melon (halve, remove seeds and slice 1 centimeter)
- 10 boiled quail eggs (peeled)
- 100 grams peeled shrimp (roughly chopped)
- 400 milliliters coconut milk (from 1/2 coconut)
- 2 bay leaves
- 3 centimeters galangal (bruised)
- 1 stalk lemongrass (crushed)
- 150 grams peas (roasted)
- Sufficient cooking oil
- Sugar to taste

- 6 red onions
- 3 cloves of garlic
- 6 red chilies (remove seeds)

1. Wash the bitter melon then knead the bitter melon evenly with fine salt, then rinse and drain.
2. Heat three tablespoons of cooking oil, then saute the ground spices with galangal, lemongrass and bay leaves until fragrant and the spices are cooked.
