- 10 red bird’s eye chilies (set aside the stalks)
- 3 cloves of garlic (peel the skin)
- Salt to taste
- Sufficient cooking oil
- Heat cooking oil in a frying pan using medium heat. Wait until the oil is really hot before frying.
- Add the cayenne pepper and garlic to the pan. Reduce the heat so that the onions and chilies don’t burn. Cover the pan when sautéing to avoid oil explosions.
- Saute until the onions and chilies turn golden yellow. Once cooked, remove and drain.
- Puree the chilies and onions using a pestle. You can adjust the texture of the chili sauce according to your taste, whether you want it smooth or a little rough.
- When grinding, add salt to taste. To strengthen the taste and texture, also add a little used frying oil. Serve.
