Japanese typical rice dishes that are cooked directly in the clay pot offer a unique culinary experience and appetizing. The name “Kamameshi” itself is rice from the word “kama” which means pan and “meshi” which means rice.
The origin of Kamameshi can be traced to the Edo era. At that time, this dish was popular among samurai. Rice along with various ingredients in a clay pot, making the rice taste richer and the aroma is increasingly appetizing. This rice can be topped and some commonly used toppings include, meat such as chicken, and beef, or seafood such as shrimp and squid, vegetables such as mushrooms, carrots, peas, and other seasonal vegetables. The spices include soy sauce, Japanese flavoring called Mirin, a typical Japanese alcoholic drink called Sake, and Dashi.
Well, on this occasion, Kamameshi is served using vegetables, including fern, and burdock, flowering plants whose roots can be consumed as vegetables. Burdock is also known as Gobo or Japanese cassava. To enjoy it, the rice that has been topped, is moved into a bowl to taste.
Then, when they want to be enjoyed, doused with dashi, which is a sauce made with a mixture of “kombu” or seaweed, and “katsuobushi” or dried bonito fish flakes. If you used to enjoy soup noodles mixed with rice, or enjoy soto with a mixture of rice, Kamameshi can be a new favorite food.
