Mini Baked Banana Bread Recipe, Sweet Snack for Any Occasion


KOMPAS.com – Mini baked banana bread is a simple snack with a sweet taste and soft texture.

The combination of soft bread crust and ripe banana filling makes this dish suitable to accompany your relaxing time at home.

The following is a recipe for mini baked banana bread that you must try, quoted from the book “500 Cake & Cooking Recipes that are Most Popular Mrs. Special Collection. Liam” (2017) by Chendawati published by Gramedia Pustaka Utama.

Material A:

  • 300 grams of high protein wheat flour (eg: Cakra)
  • 25 grams of sugar
  • 10 grams of instant yeast
  • 150 ml water

Material B:

  • 700 grams of medium protein wheat flour (eg: Triangle)
  • 225 grams of granulated sugar
  • 10 grams of bread softener
  • 10 grams of instant yeast

Material C:

  • 75 grams of butter
  • 75 grams margarine
  • 50 grams royalkrone butter substitute
  • 10 grams of powdered milk
  • 15 grams of salt

Ingredient D (Observer):

  • 40 grams of powdered milk
  • 5 egg yolks
  • 2 egg whites
  • 125–150 ml evaporated milk

Filling Ingredients:

  • Enough butter for frying
  • 5 old plantains, cut into pieces
  • Powdered sugar to taste
  • Slices of cheese to taste, cut into pieces
  1. Mix all ingredients A, then mixer at medium speed for ±5 minutes until evenly mixed. Let the dough rest for 1 hour until it rises, then set aside.
  2. Mix all ingredients B, then mix on medium speed until evenly mixed for ± 10 minutes. Add the mixture to ingredient A into ingredient B, then mix until smooth.
  3. Add ingredient C little by little to the dough, then knead or use a mixer until the dough is smooth and elastic. Let stand for 30 minutes until doubled in size.
  4. Punch down the dough, cut and weigh 15 grams each. Shape into a round shape, then let it sit again for ± 15 minutes.
  5. Saute the banana pieces in butter until golden brown. Sprinkle with powdered sugar, let cool, then cut the banana into two parts.
  6. Roll the dough that has been rounded until it is flat. Place slices of banana and cheese as filling, fold and roll. Arrange in a baking dish that has been smeared with margarine until evenly distributed.
  7. Leave the dough for ± 60 minutes until it rises to maximum. Polish the surface evenly with D material.
  8. Bake the dough in a preheated oven at 200°C for ±10 minutes until cooked and golden brown.
  9. Once cooked, while still hot, spread the bread with butter to make it more delicious and shiny. Serve warm.
