Lotek recipe, a menu made by Togar Masterchef Indonesia season 12

Sauce material:

  • 150 grams of skin peanuts (fried, puree)
  • 2 tablespoons of tamarind water from 2 teaspoons of tamarind acid and 2 tablespoons of water (dissolve)
  • 50 grams of potatoes (boiled, puree)
  • 1 1/2 tablespoon of brown sugar
  • 1 1/2 teaspoon of salt
  • 200 milliliters of hot water

The seasoning ingredients that are mashed:

  • 4 red chili
  • 2 cayenne pepper
  • 3 grains of shallots
  • 2 cloves of garlic
  • 6 centimeters of kencur

How to make a lotek

  1. Peanut sauce. Mix the mashed spices with mashed potatoes, brown sugar, and salt. Stir well.
  2. Give mashed peanuts and sour water. Stir again until smooth. Pour hot water, stir again until smooth.
  3. Tata kale, bean sprouts, and cabbage on a serving plate. Flush with peanut sauce on it. Serve with crackers.
