KOMPAS.com – Longevity noodles are one of the dishes often served every Chinese New Year celebration.
Quoted from the Food & Wine page, in Chinese culture, the habit of eating longevity noodles during Chinese New Year or celebrations such as birthdays has existed since the Han Dynasty.
These noodles are thought to bring good luck, prosperity, and as the name suggests, long life.

Longevity noodles are basically Chinese egg noodles prepared with a combination of soy sauce, sesame oil and peanut oil. Plus, fresh chestnuts and snow peas.

Long life noodle ingredients:
- 2 liters of clean water
- 360 grams of bean sprouts
- 1 1/2 teaspoons kosher salt
- 224 grams of Chinese egg noodles
- 59 milliliters chicken stock
- 1 tablespoon + 1/2 teaspoon soy sauce
- 1/2 teaspoon roasted sesame oil
- 1 tablespoon peanut oil
- 2 centimeters fresh ginger (crushed)
- 113 grams fresh peas (remove the fiber)
- 3 fresh water chestnuts (peeled and sliced)

1. Boil 2 liters of water in a large saucepan, then soak the bean sprouts for about 10 seconds until the texture is crispy-tender. After that, remove the bean sprouts then rinse the bean sprouts in cold water for about 30 seconds, then drain.
2. Add salt to the boiling water in the pan, then boil the noodles while stirring until tender, about one minute. After that, drain the noodles, continue rinsing the noodles with cold water for about a minute, then drain.
3. In a separate bowl, mix the stock, soy sauce and sesame oil until evenly mixed, then set the sauce aside.
4. Heat peanut oil in a frying pan over high heat, then add the ginger and stir-fry until fragrant, about 10 seconds. Add the snow peas and cook, stirring frequently, for about one minute.
5. Add the chestnuts, then cook while stirring for about 30 seconds. Add the bean sprouts and cook until wilted, about one minute.
6. Pour in the sauce mixture then cook while stirring until evenly distributed. Add the noodles to the wok, then cook for about two minutes until the noodles absorb the sauce.
7. Discard the ginger, then season with enough soy sauce. Check the taste before serving the noodles.
