Some people believe that white rice calories can be reduced through cooking with coconut oil. Is this method really effective? This is the doctor said.
On social media viral tips for cooking white rice in a rice cooker by adding coconut oil. This method is believed to reduce to 60% of its calorie content and sugar levels in rice.
The Tiktok Food Technologist account (12/15/2022) which often discusses food technology has also reviewed similar tips based on research in Sri Lanka. He explained how to cook rice with coconut oil to reduce its calorie levels.

There are several steps that need to be considered, including silent rice in the refrigerator for approximately 12 hours.
“In this process there is a change in the chemical structure of starch in rice into a type of starch that cannot be digested digestion (resistant starch). Because it is not digested so countless as calories, even when reheated it is said that it will not add calories to the rice,” explained the owner of the Tiktok Food Technologist account.
Dr. Dion Haryadi through Instagram Dionharyadi (3/21/2025) also explained the origin of the popular method of cooking this rice.

“The trick to cook rice mixed with coconut oil has actually been a long time and emerged from news articles that reported research in Sri Lanka. They found by adding coconut oil to the cooked rice, then put the rice into the refrigerator for 12 hours, can increase slow absorption carbohydrates and lower the calories from the rice by approximately 10-15 percent,” explained Dr. Dion.
Researchers then stated that there is a possibility that the type of rice used is better, then the decline in calories can reach 50-60 percent.
Then how is the practice of cooking rice mixed with coconut oil to reduce its calories, according to Dr. Dion? “So the claim can reduce calories by 50-60 percent, which is only a hypothesis,” he said.
For claims to decline in calories 10-15%, dr. Dion said it needed to refer to the original research report. “We have to check the research method, how the number is, how much is the sample, and so on. This is important because it can be ‘wrong arrest’ like in a viral video that does not teach that the rice needs to be stored in the refrigerator,” he explained.
