How to Store Opened Durian to Keep It Fresh


KOMPAS.com – Durian tastes legit and delicious, but sometimes this thorny fruit can’t be finished all at once.

If you have durian that has been opened, there are effective ways to store it to keep it fresh and delicious. Check out the following tips, quoted from Kompas.comFriday (26/2/2021).

Ripe durian undergoes changes in content. The carbohydrates in durian will turn into sugar, then into alcohol, and finally rot until they contain vinegar.

“So if the fruit falls and it hasn’t been 24 hours, it means that the carbohydrates have become sugar and the sugar has not yet turned into alcohol,” said the Chairman of the NUSANTARA Durian Foundation at that time, Mohamad Reza Tirtawinata.

This fermentation process can be slowed down if durian is stored in the right place.

Reza said, the temperature was cold inside freezer is the key to inhibiting fermentation.

Malaysians, for example, use this method to maintain the quality of Musangking durian which is known to be delicious if eaten before 24 hours after opening.

If left longer, the taste of the durian will change due to the fermentation process.

Here are the steps for storing durian in freezer:

  1. Place the opened durian in a tightly closed container. This step will prevent the durian aroma from spreading inside freezer.
  2. Place the durian container inside freezer with freezing temperatures to stop durian fermentation.

If you store durian this way, the fruit will stay fresh for several months. The original taste of durian does not change if stored properly.

How to eat frozen durian

When you want to eat durian that has been stored again, here are the steps.

  1. Remove the durian from freezer. Let the durian thaw naturally at room temperature.
  2. After the durian is thawed, consume it immediately until it’s finished. If the durian is put back in freezer once thawed, the quality of taste and texture will decrease drastically.
