KOMPAS.com – Klapertart is a typical Manado cake made from young coconut meat, sprinkled with raisins and a strong taste of cinnamon. It can be used as a special occasion treat.
Klapertart is made from butter, liquid milk, granulated sugar, ground cinnamon, chicken egg yolks, young coconut meat, wheat flour, custard flour and cornstarch.
Meanwhile, the ingredients for the egg white layer are chicken eggs, sugar, all-purpose flour, dates and vanilla extract.

Material:
- 1 liter of liquid milk
- 250 grams of granulated sugar
- 150 grams of butter
- 100 grams of toasted almond chips
- 1/2 tsp ground cinnamon
- 7 egg yolks
- 500 grams of young coconut meat, from 3 coconuts
Stir well:
- 50 grams of all-purpose wheat flour
- 250 grams of custard flour
- 50 grams of cornstarch
Egg white layer:
- 3 chicken eggs
- 100 grams of fine-grained sugar
- 2 tbsp all purpose flour
- 100 grams dates, seeds removed, thinly sliced lengthwise
- 1 tbsp vanilla extract

1. Prepare a heatproof dish, spread the surface with butter until smooth.
2. Boil 800 milliliters of milk and sugar until dissolved. Lift. Set aside. Dissolve the flour mixture with 200 milliliters of milk, stir well.
3. Add the solution to the hot milk little by little, stirring continuously until it boils. Add butter, almonds and ground cinnamon, mix well.
4. Add the egg yolks one by one while continuing to stir until evenly mixed. Add young coconut meat, stir well.
5. Pour into a heatproof dish and bake at 180 degrees Celsius for 30 minutes.
6. Egg white layer: beat the egg whites while adding the sugar little by little until stiff. Add flour and vanilla extract, stir well.
7. Spray the egg white mixture over the custard mixture. Arrange the dates or raisins over the egg whites and sprinkle with ground cinnamon.
8. Bake again for five minutes over high heat until the surface is golden brown.
