Dragon’s feet recipe
The main ingredient
- 150 g boneless chicken meat
- 150 g peeled prawns
- 1 spring onion, finely sliced
- 2 cloves of garlic, crushed
- 2 tbsp fried onions, puree
- 150 g sago flour
- 1 egg, beaten well
- 2 tbsp water
- Salt, pepper and stock powder to taste
Upholstery
- 1 egg, beaten well
- Enough bread flour
Addition
- Ice cream sticks for skewers
How to Make Dragon Legs
- Puree the chicken and shrimp using a food processor.
- Mix with spring onions, garlic, fried onions, sago flour, eggs, water, salt, pepper and stock powder.
- Stir until the mixture is evenly mixed.
- Heat the water until it boils. Grease your hands with a little oil, take 1 tablespoon of the mixture, then squeeze it onto the tip of an ice cream stick and form a round oval.
- Put the dragon’s feet in boiling water and boil until they float. Remove, drain and cool.
- Dip the dragon’s feet into the beaten egg, then coat in breadcrumbs until evenly coated.
- Store the dragon legs in the refrigerator for 1 hour before frying, or store in the freezer for frozen food stock.
- To serve, fry the dragon legs over medium heat until brown.
