KOMPAS.com – Balado eggs are generally red from red chilies, this time you can make balado eggs from green chilies.
This green chili balado egg is cooked with shallots, garlic, large green chilies, green cayenne peppers, tomatoes, bay leaves, galangal and lime leaves.
Green chili balado eggs use chicken eggs that have been boiled and then mixed with spices.

Material:
- 4 boiled chicken eggs, peeled
- Bay leaf 1 sheet
- 2 cm galangal, crushed
- 3 lime leaves
- Salt to taste
- Granulated sugar 1/2 tsp
- Water 100 ml
- Cooking oil 2 tbsp
Coarsely ground spices:
- Red onion 3 pieces
- Garlic 2 cloves
- 2 large green chilies
- 10 green cayenne peppers
- Tomato 1 piece

How to make green chili balado eggs:
1. Saute coarsely ground spices, bay leaves, galangal and lime leaves until fragrant.
2. Add eggs, season with salt and sugar. Stir well.
3. Pour in water. Cook until cooked and absorbed.
4. Lift and serve.
