Frying with cold oil vs hot oil, when to do?


Kompas.com – Many people think that frying food should always use hot oil. They think that if the oil is not hot, food will absorb too much oil.

However, it was not always the case. There are some foods that are actually better fried with cold oil.

So, when do we have to use cold oil and when to use hot oil? Check out the explanation below:

Fry with cold oil

The cold oil referred to here is oil that has not been hot even though the fire has been turned on. The process is to light a fire and immediately put food in a pan filled with oil that is still cold.

Certain foods are better fried with cold oil because it has a hard surface so it does not absorb much oil. In addition, this method is also useful to avoid broken food when exposed to hot oil.

Examples of fried foods with cold oil:

  • Cork eggs
  • Coconut root
  • Boiled rice cake
  • Peanuts (if put into hot oil, the beans will immediately turn brown even though the inside is not ripe)

Fry with hot oil

The use of hot oil is more commonly done, especially for foods that do not require a long time to ripen.

With hot oil, food can be cooked faster with a more crispy texture outside but still soft inside.

Examples of foods that should be fried with hot oil:

  • Fried fish – so that the outside of the crispy and the inside remains soft
  • Tofu Chocolate – Just fried to the skin
  • French fries – so that the texture is crispy
  • Fried white bread or risoles from white bread – Because bread is very easy to absorb oil, it must be fried briefly in hot oil
  • Pastel-After the oil is hot, the fire can be turned off before frying the pastel so that the skin is rolled up

How to check the oil is hot

In order not to be wrong in frying, we can check whether the oil is hot enough in the following way:

  • Use kitchen utensils made from wood such as chopsticks or wood spatulas.
  • Dip into oil.
  • If the bubbles have appeared around the device, the sign is that the oil is ready to use.
