KOMPAS.com – Still using potatoes like regular mud cakes, only making this soft cake dough is even more special with durian.
Durian flesh is mixed into the mud cake mixture, plus durian paste which makes the cake even more fragrant.
For those of you who love durian, you can use this durian mud cake recipe to make new creations from the king of fruit.

Material:
- 4 egg yolks
- 2 egg whites
- 150 gr granulated sugar
- 1/4 tsp salt
- 400 gr steamed potatoes, mashed
- 50 gr flour
- 300 ml thick coconut milk from 1/2 coconut
- 1 tsp durian paste
- 50 gr durian flesh
- 3-4 tablespoons sweet corn or young coconut or raisins
1. Beat egg yolks, egg whites, sugar and salt until fluffy.
2. Add flour and potatoes. Pour in the coconut milk and durian paste, stir until smooth.
3. Add the durian flesh, beat with a mixer on low speed for approximately one minute.
4. Heat a mud cake mold that has been greased with a little oil, then add the mixture, cover and place hot coals on top.
5. Bake until half cooked over low heat, then sprinkle on top with sweet corn. Continue baking until cooked.
