KOMPAS.com – Durian season is the time most eagerly awaited by durian lovers. Apart from being enjoyed directly, durian is also delicious when processed into snacks such as mochi.
Similar to mochi in general, mochi skin is made from a mixture of ingredients such as sticky rice flour, rice flour, sugar and whiting.

Durian mochi ingredients:
- 175 grams of sticky rice flour
- 25 grams of rice flour
- 1 tablespoon refined sugar
- 1/2 teaspoon salt
- 1 teaspoon of whiting water
- 200-225 milliliters of thick coconut milk
- Banana leaf
- Cornstarch to taste (toasted)
Filling ingredients (mix):
- 50 grams of durian flesh (finely ground)
- 50 grams of powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon wheat flour
- 25 milliliters of clean water

How to make durian mochi:
1. Mix sticky rice flour, rice flour, sugar, salt, whiting water and coconut milk while kneading until smooth. Then shape the dough into small balls and fill with the filling.
2. Steam the mixture in a steamer lined with banana leaves and boiling for 15 minutes, then remove and roll in cornstarch. Mochi is ready to be served.
