KOMPAS.com – Fried noodles are one of the favorite menus at home, you can make vegetable fried noodles.
Fried vegetable noodles are made with egg, caisim mustard greens, cabbage leaves, carrots, shiitake mushrooms, bean sprouts, sweet soy sauce, light soy sauce, pepper, garlic and shallots.
Fried vegetable noodles are served with pickled cucumber, it’s easy to make from cucumber, vinegar, sugar and salt.

Material:
- 200 grams of dry noodles, brew in hot water, drain
- 2 beaten eggs, make scrambled
- 100 grams of caisim mustard greens, cut into 3 cm pieces
- 100 grams cabbage leaves, roughly chopped
- 1 small carrot, cut into matchsticks
- 3 shiitake mushrooms, thinly sliced
- 100 grams of large bean sprouts
- 1 tbsp sweet soy sauce without sugar
- 1 tbsp soy sauce
- 1/2 tsp ground pepper
- 5 red onions, thinly sliced
- 3 cloves of garlic, thinly sliced
- 2-3 tablespoons cooking oil

1. With two to three tablespoons of cooking oil, saute the garlic and shallots until brown.
2. Add two tablespoons of water, add carrots, shiitake mushrooms, cabbage, caisim and noodles in succession. Pour in soy sauce, cover for a minute.
Open the lid, pour in sweet soy sauce without sugar, stir until all the noodles are hot. Add the bean sprouts, stir well, remove from heat immediately.
3. Serve with a sprinkling of scrambled eggs and fried onions. Add watercress leaves and cucumber pickle.
4. Pickled cucumbers: Scoop out the cucumber seeds, cut into pieces according to taste. Dissolve 1/8 teaspoon salt, one sachet of substitute sugar, and two teaspoons of vinegar. Add the cucumber, stir well, leave at room temperature for 30 minutes.
