Chun Juan Recipe, Fried Spring Rolls for Chinese New Year Snacks


KOMPAS.com – Chinese New Year celebrations are synonymous with family gatherings and eating. So that you don’t have to worry too much on the big day, you can also prepare food in the refrigerator to stock up on.

One of the foods that can be used as stock for Chinese New Year celebrations is Chun Juanaka fried spring rolls.

Chun Juan It can be made long before Chinese New Year and stored in the refrigerator so it lasts.

Material Chun Juan:

  • 5 dried black mushrooms
  • 100 grams boneless chicken meat
  • 1 tablespoon grated fresh ginger
  • 4 tablespoons oyster sauce
  • 1 tablespoon roasted sesame oil
  • 1 tablespoon rice wine (optional)
  • 1/2 teaspoon sugar
  • 2 teaspoons cornstarch
  • A pinch of freshly ground black pepper
  • 3 cups vegetable oil
  • 1 carrot (peeled and finely chopped)
  • 226 grams of bean sprouts
  • 60 grams chopped roasted almonds
  • 12 pieces of instant spring roll skin
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic (peeled and finely chopped)

How to make Chun Juan:

1. Soak dried mushrooms in cold water overnight in the refrigerator, the next day drain the mushrooms and slice thinly. Meanwhile, prepare the meat and cut it thinly against the grain.

2. Stir the meat with ginger, a tablespoon of oyster sauce, toasted sesame oil, rice wine, a spoonful of cornstarch, and black pepper until evenly mixed.

3. Store the meat in a closed container and then chill it in the refrigerator several hours or overnight beforehand.

4. Heat a frying pan using high heat, then add 59 milliliters of vegetable oil. Saute the meat in a frying pan until cooked and changes color, then remove and drain the meat.

5. Reheat the pan over high heat, then sauté the mushrooms and carrots until slightly wilted. After that, transfer the sautéed mushrooms and carrots to the bowl containing the meat.

6. Clean the pan with kitchen tissue, then reheat over high heat. After that, put the bean sprouts into a dry frying pan and stir quickly until the bean sprouts are crispy and no longer raw.

7. Pour the bean sprouts into a bowl containing the stir-fried meat and vegetables, then add three tablespoons of oyster sauce and almonds. Stir until all ingredients are evenly mixed, then let cool.

8. Mix the Worcestershire sauce, balsamic vinegar and garlic and set aside for the sauce. Meanwhile, prepare the spring roll skins, then fill each spring roll skin with the spring roll filling.

9. Store spring rolls in airtight plastic for stock in the refrigerator. However, if you want to cook it straight away, fry the spring rolls in hot oil at a temperature of around 165-175 degrees Celsius until cooked.

10. Serve spring rolls while warm with dipping sauce.
