Chicken lemper recipe 1 kg of sticky rice, not stale and fluffier continues

Chicken lemper recipe 1 kg sticky rice

Leather leather material:

  • 1 kg of sticky rice, soak 4-5 hours
  • 500 ml of thick coconut milk
  • 2 pandanus leaves
  • 1 tablespoon salt

Chicken filling material:

  • 4 kg of chicken meat, boiled and shredded
  • 6 grains of shallots
  • 4 cloves of garlic
  • 3 cm kencur, puree
  • 1 tablespoon slices of celery leaves
  • 3 tablespoons of sugar
  • 1 tablespoon salt
  • 1/2 teaspoon pepper powder
  • 200 ml of thick coconut milk
  • 3 tablespoons of oil to saute

How to make lemper skin

  1. Soak sticky rice for several hours before steamed. Soaking makes sticky rice more easily mature and fluffier.
  2. Steam the sticky rice until half cooked. Remove and pour boiling coconut milk, stir well. Steam back until cooked for about an hour.

How to make chicken filling

  1. Saute onion, garlic, and kencur until fragrant. Add shredded chicken and celery leaves, stir well.
  2. Pour coconut milk, salt, sugar, and pepper. Cook until the chicken absorbs the spices and the texture is rather dry.

How to form and wrap lemper

  1. Take two tablespoons of sticky rice, flatten in hand. Give the chicken and then the head until it is solid.
  2. Wrap the lemper with banana leaves so that the aroma is fragrant. Serve chicken lemper as a snack or special dish.
