Archipelago The 29th Food Festival (AFF) was held at the Harper Cikarang Hotel, West Java, Thursday (10/19/23). This AFF’s biggest culinary event carries the theme of The Tomahawk.
To serve Tomahawk Premium Steak and other menus with Western and Asian flavors, Chef As Windoe, Corporate Executive Chef of Archipelago International collaborate with eight chefs.
The eight chefs are Chef Risman from Corporate Pastry Chef Archipelago International, Chef Sigit from Harper Cikarang, Chef Febry from Aston Pasteur, Chef Hadi from Harper MT. Haryono, Chef Faiz from Aston Cilegon, Chef Guntur from Favehotel Glodok, and Chef Cipto from Harper Purwakarta.
“The main menu that is the star is Tomahawk. For the chefs we collaborate. There are representing Western, Potato, then there is Asian Oh Fried Rice we enter Japan or Korea found Kimchi Fried Rice, so we are combine,” said Chef As Windoe, Corporate Executive Executive Chef of Archipelago International.

Windoe revealed, choosing the main menu of Steak Tomahawk because it refers to hotel guests dominated by foreign nationals. Not only that, Windoe also considered that this premium beef was also popular with many people.

Trying Tomahawk Premium Steak
In the event, MNC Portal had the opportunity to try all the food served at the Archipelago Food Festival 2023. The first menu was Assorted Breads (Pretzel, Mini Baquette, Focacia, Lavosh) and Nibble (Cahsew & Parmesan).
While the appearance of nibble beans has a salty taste that is addictive.
Not only that, the next starter menu, is Roasted Sisig Bone Marrow with a luxurious appearance.
Next we are served pieces of marrow bones with delicious taste from meat on the top and soft bone marrow.
After the menu, the MNC Portal again tasted salads and soups consisting of Pomelo Salad and Corn and Lemongrass Soup with Gualapeno Bruschetta.

Furthermore, after enjoying the starter and soup, it was time for MNC Portal to enjoy the main dish, namely Australian Tomahawk Black Angus. The main menu is also presented side dish, such as Kimchi Fried Rice, Mashed Potato and so on.
This premium beef has a soft taste but remains dense when eaten. Although Tomahawk is identical to the large portion, the great chefs can process it well so that there is no hard part of the flesh, but is really soft.
To add to the taste of Tomahawk steak, there are four choices of sauce such as jalapeno sauce, mushroom sauce, chimichurri sauce, to BBQ sauce. Of all these sauces, according to MNC the taste that best suits Tomahawk is Jalapeno sauce.
In addition to enjoying Tomahawk meat, MNC Portal also tried Korean -style fried rice complete with a variety of topings ranging from shrimp to chicken.
