KOMPAS.com – Indonesia has a variety of chili sauce, one of the sambal that is quite popular originating from Bali is Sambal Matah.
Sambal Matah is made with garlic, onion, shrimp paste, red cayenne pepper, orange leaves, lemongrass, and lime.
Sambal Matah is suitable juxtaposed with grilled fish or fried chicken, see the following recipe.

- 6 cloves of garlic
- 10 shallots
- 15 red cayenne pepper
- 1 tablespoon of cooked shrimp paste (fried)
- 3 pieces of orange leaves, remove the bones, finely sliced
- 2 lemongrass stems, finely sliced white parts
