Ingredients for spring rolls filled with mushrooms:
- 284 grams sliced shiitake mushrooms
- 145 grams sliced button mushrooms
- 145 grams oyster mushrooms (optional)
- 284 grams chopped spring onions
- 145 grams of bean sprouts
- 150 grams of hoisin sauce
- 2 chopped chilies
- 1 tablespoon minced garlic
- 1 tablespoon chopped ginger
- 2 tablespoons canola oil
- 145 grams chopped spring onions
- 145 grams chopped coriander leaves
- 1 pack vermicelli (boil, drain and cut into pieces)
- Salt to taste
- Pepper to taste
- 1 pack of instant spring roll skins
- 1 egg (beaten with 118 milliliters of water)
Dipping sauce ingredients:
- 35 grams of sliced spring onions
- 1 teaspoon sugar
- 59 milliliters light soy sauce
- 1 lemon (take the juice)

How to make spring rolls stuffed with mushrooms:
1. Heat oil in a frying pan, then saute garlic, ginger and chili until fragrant, then add hoisin sauce. Add the shiitake mushrooms, spring onions and bean sprouts, then stir-fry again until wilted.
2. Correct the taste of the stir-fry, then remove from heat and set aside. Once the stir-fry has cooled, add the coriander leaves, spring onions and boiled vermicelli, then stir until all the ingredients are evenly mixed.
