Yu Sheng Recipe, Lucky Salad for Chinese New Year


KOMPAS.com – Yu Sheng, or what is often called Lucky Salad, is a typical dish that is always present in Chinese New Year celebrations.

This dish is not only delicious, but also full of meaning, symbolizing good luck, prosperity and happiness in the new year.

This colorful salad consists of fresh vegetables, sliced ​​salmon and a sweet plum dressing.

Yu Sheng’s recipe

Salad Ingredients:

  • 1/4 cup carrots, thinly sliced
  • 1/4 cup white radish, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1 cup sweet potato, thinly sliced
  • Red, green and purple food coloring
  • 2 tbsp pickled red ginger
  • 1 pomelo, peeled and thinly sliced
  • 2 tbsp vegetable oil
  • 1/4 pound salmon sashimi, thinly sliced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp roasted peanuts, chopped
  • 1 tsp five spice powder
  • 1 tsp cinnamon
  • A pinch of ground white pepper
  • Pok chui crackers (Chinese crackers)

Dressing Ingredients:

  • 3 tbsp plum sauce, optional
  • 1 tbsp rice vinegar, optional
  • 1 tsp sesame oil

How to Make Salad:

  1. Prepare vegetables by cutting them into thin strips using a knife or mandoline.
  2. Roll the salmon slices into a rose shape by rolling them like a log and pinching one end to create the base of the rose.
  3. Heat vegetable oil in a frying pan over high heat. Quickly fry the sweet potatoes until crispy, then drain on kitchen paper.
  4. Divide the fried sweet potatoes into three parts, then add red, green and purple food coloring to each.
  5. Arrange each type of vegetable in small piles around a serving plate. Place the salmon rose in the center of the plate.
  6. Combine five-spice powder, cinnamon, and white pepper in a small bowl for a spice mix. Prepare peanuts and sesame seeds in separate bowls.

How to Make Dressing:

  1. Combine plum sauce, rice vinegar, and sesame oil in a small bowl. Stir until evenly mixed, then pour into a serving bowl.
