KOMPAS.com – If you are bored of eating ripe durian, you can try processing this king of fruit.
Like fried bananas, durian can also be coated in flour and spices, then fried until golden brown.
However, make sure the texture of the durian is a bit hard before frying so that it doesn’t fall apart after cooking.
Cut the durian into pieces, then put it inside freezer until the texture is quite firm before dusting in flour.

Material:
- Sufficient durian flesh, cut into 2 cm x 2 cm widths
- 140 gr flour
- 60 gr rice flour
- 2 eggs
- 175 ml water
- 8 tbsp granulated sugar
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp vanilla powder
- Refined sugar to taste
1. Mix together: flour, rice flour, eggs, water, granulated sugar, salt, cinnamon powder and vanilla powder. Stir until mixed well and form a fairly thick dough.
2. Coat each piece of durian in the flour mixture. If the durian is too soft after cutting it, put it in freezer first. Fry until brownish yellow. Lift, drain.
3. Roll the fried durian in powdered sugar. Serve.
