KOMPAS.com – Tofu is a food ingredient that is often found in the kitchen, and is easy to process into various dishes. One of them is pepes tofu.
Pepes tofu offers a savory taste, with the distinctive aroma of banana leaves used as wrapping. Apart from that, pepes tofu is also healthy because it is cooked without cooking oil.

- 100 grams of white tofu
- 1 bunch basil
- Green onions to taste (finely sliced)
- 1 egg
- 3 cloves of red onion
- 3 cloves of garlic
- 2 candlenuts
- 1 teaspoon salt
- ¼ teaspoon stock powder
- Enough banana leaves to wrap
- 2 centimeters galangal
- 2 centimeters galangal
- 2 curly red chilies
- 2 binocular red chilies
- 1 tablespoon dried ebi (finely ground)
- 3 sprigs basil (siangi)
How to make tofu pepes
- Puree the shallots, garlic, curly red chilies, binocular red chilies, galangal, candlenuts and galangal until smooth. Set aside.
- Mash the white tofu using a fork until smooth. Add the sliced spring onions and ground spices to it, then stir until evenly mixed.
- Add the mashed ebi, stir again. After that, add basil leaves and eggs. Stir gently until all ingredients are evenly mixed.
- Take a banana leaf, then put two to three tablespoons of tofu mixture into it. Place one bird’s eye chili on top of the tofu mixture, then wrap it neatly and attach a toothpick to both ends.
- Heat the steamer until the water boils. Steam the tofu pepes for approximately 30 minutes until cooked. Remove and serve while warm.
