How to Make Meranti Style Cheese Rolled Bolu, a Typical Medan Souvenir


KOMPAS.com Bolu Meranti is known as a souvenir of Medan City, North Sumatra, besides the legit bika Ambon.

The characteristic of Bolu Meranti lies in the abundance of grated cheese, both on the inside and outside of the bolu.

Without needing to go all the way to Medan, you can make your own Meranti style cheese cake rolls at home.

Follow the Meranti style cheese cake roll recipe for 12 pieces from the book “Steamed and Baked Cakes and Bolu” (2018) by Ayu Kharie and the Demedia Kitchen Team published by Demedia Pustaka Utama below.

Material:

  • 6 egg yolks
  • 90 grams of fine granulated sugar
  • 1 1/2 teaspoons cake emulsifier

Sift together:

  • 70 grams of flour
  • 10 grams of flour custard or cornstarch
  • 10 grams of powdered milk
  • 120 grams margarine (melted)

Toppings:

  • Butter cream enough
  • Grated cheese to taste

1. Beat egg yolks, granulated sugar, and cake emulsifier until it expands and thickens.

2. Add the sifted flour mixture to the beaten egg and sugar. Stir with a spoon.

3. Prepare a baking dish measuring 24 centimeters x 24 centimeters, spread with margarine.

4. Pour the sponge mixture into the baking pan. Bake at 160 degrees Celsius for 15 minutes or until cooked. Remove, let cool.

5. Flip the cake onto a napkin. Brush with buttercream and sprinkle with grated cheese.

6. Roll the cake carefully until it is solid. Store in the refrigerator for 15 minutes.

7. Take it out, grease the surface of the rolled cake with buttercreamsprinkle with grated cheese.
