Mushroom Chicken Soup Recipe, Warm Side Dish for the Rainy Season


KOMPAS.com – The rainy season is synonymous with cold weather and continuous drizzle. There is nothing better to warm the body than eating delicious soup.

The following mushroom chicken soup is made from a combination of chicken meat, shiitake mushrooms and chewy lotus seeds. This menu could be the perfect choice to accompany a cold rainy day.

The following recipe from the book “The Easiest Soup Recipe” by Sisca Soewitomo (2012) published by PT Gramedia Pustaka Utama can be imitated at home:

Chicken soup ingredients:

  • 10 pieces of chicken wings (wash clean and drain)
  • 2 tablespoons cooking oil
  • 1 teaspoon sesame oil
  • 3 cloves garlic (crushed)
  • 2 centimeters ginger (crushed)
  • 1 liter water (for broth)
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 100 grams of lotus seeds
  • 250 g ram fresh shiitake mushrooms
  • 1 spring onion (sliced)
  • 2 stalks coriander leaves (sliced)

How to make chicken soup:

1. Heat cooking oil and sesame oil in a pan then saute the garlic and ginger until fragrant. Put the stir-fry into a pan filled with water, then cook until it boils.

2. Add chicken wings, soy sauce, salt and ground pepper. Then cook using low heat until the chicken is soft.

3. Meanwhile, soak the lotus seeds in water for 30 minutes, remove the small green seeds in the center. After that, boil the lotus seeds until soft.

4. Once the chicken is soft, add the lotus seeds and mushrooms, cook briefly then adjust the taste of the soup with salt and seasoning. Add sliced ​​spring onions and coriander leaves, then serve while warm.
