This triggers confusion as to whether steak must it be made from imported beef or can it be made using local beef?

Gustaf Djaja, Corporate Executive Chef of Justus Steakhouse answered this question. According to him, local beef can be processed steak.
“If you say local beef can be made steak“Yes, you can,” explained Gustaf when met Kompas.com at Justus Steakhouse Asthana Kemang, Central Jakarta, Tuesday (7/1/2025).
However, how to make steak using local beef is not as practical steak imported meat.

Meanwhile, local beef is known for its less tender texture, it tends to be tough so it needs to be cooked for a long time.
The tough texture of local beef can be overcome by adding meat tenderizer (tenderizer).
“We have tenderizer powder, but the downside is that it must be left overnight (overnight) to maximize it,” said Gustaf.
This tenderizing agent can break down the meat fibers which makes the texture tough, slowly becoming soft.
Unfortunately, excessive use of meat tenderizer, both in terms of duration and quantity, can also ruin the texture of the meat.
