Typical Sundanese Seblak Recipe, More Flavorful


KOMPAS.com – This typical Sundanese street food seblak is suitable to be enjoyed during the rainy season to warm the body.

Seblak is made with raw crackers, shallots, garlic, galangal, lime leaves, lime, eggs, cayenne pepper, sausage and flavorings.

Check out the following recipe for typical Sundanese seblak which tastes of kencur, quoted from the book “Various, Most Favorite, Popular, Special Sundanese Dishes” (2013) by the Editors of MWI published by SKYLAR.

Material:

  • 250 grams of raw crackers source juice
  • 5 cloves of red onion
  • 3 cloves of garlic
  • 3 pieces of galangal
  • 2 tsp salt
  • 1 tsp beef flavoring
  • 7 lime leaves
  • 1 lime (take the juice)
  • 1 egg
  • 10 cayenne peppers
  • 1 medium size sausage
  • Cooking oil

How to make seblak:

1. Wash raw crackers, drain then drizzle with two tablespoons of cooking oil and lime juice.

2. Grind the shallots, garlic, galangal, cayenne pepper and salt.

3. Slice the sausage according to taste.

4. Heat the oil for frying, add the ground spices, then add the eggs. Stir it around.

5. Add enough water, stir in all the spices and eggs.

6. Once boiling, add the raw crackers and slice the sausage. Add lime leaves and seasoning.

7. Let the water and spices soak into the crackers.

8. Once the crackers are soft, remove from heat and serve while warm.
