- 7 red bird’s eye chilies (finely sliced)
- 9 red onions (finely sliced)
- 3 cloves garlic (finely sliced)
- 2 stalks lemongrass (take the white part, finely slice)
- 3 lime leaves (finely sliced)
- 4 tbsp lime juice
- 1 tsp granulated sugar
- 1/2 tsp shrimp paste (grilled or roasted, pureed)
- 4 tbsp hot cooking oil
- 1 tsp fine salt
- 1/4 tsp flavoring (optional)
- Mix all the chili ingredients, stir until smooth.
- Add hot oil, stir again. Serve.
