Material

  • 300 grams wet rice noodles, wash and drain
  • 100 grams of shrimp, clean
  • 5 tbsp cooking oil
  • 3 cloves of garlic, finely chopped
  • 2 red onions, thinly sliced
  • 1/2 onion, sliced
  • 1 spring onion, finely sliced
  • 1 tbsp lime juice
  • 2 tbsp sweet soy sauce
  • 1 tbsp soy sauce
  • 2 tbsp bottled chili sauce
  • 1 tbsp oyster sauce
  • 1 tsp ground pepper
  • 1 tsp chili powder (adjust to desired spicy level)
  • 2 tsp flavoring (if you like)
  • 1 duck egg, thin omelette, finely sliced
  • 1/4 tsp fine salt

How to Make Spicy Fried Kwetiau

  1. Prepare wet rice noodles with hot water, drain and set aside. Clean the shrimp, set aside.
  2. Heat oil, saute shallots, garlic and candlenuts until fragrant. Add shrimp, cook until it changes color.
  3. Add rice noodles, sweet soy sauce, salty soy sauce, oyster sauce, chili sauce and other spices. Stir well until all ingredients are completely mixed.
  4. Cook until the rice noodles are cooked and the spices are absorbed. Serve with a thin omelet on top.
