2 Recipes for Chef Devina’s Anti-Prengus Goat Satay Seasoning


Liputan6.com, Yogyakarta – The Eid al-Adha moment is synonymous with an abundance of various processed meats. One of them is processed satai or goat satay which becomes a popular culinary menu when Eid al-Adha arrives.

Goat satay has a distinctive aroma, which will certainly change the tastes of those who enjoy grilled meat. The problem is, not everyone is good at processing goat meat so that it doesn’t become tough and smell bad.

Recently, Chef Devina Hermawan shared how to make goat satai which can be your inspiration. Chef Devina shares a satai recipe with two different choices of goat satai seasoning, namely soy sauce and taichan seasoning.

This Master Chef graduate even revealed several tips for making goat meat more tender and the spices penetrate perfectly. Quoted from Devina Hermawan’s YouTube page, here is a recipe for seasoning for goat satay which is guaranteed to be soft and anti-prengus.

1. Soy Sauce Seasoned Goat Satai Recipe

Material:

500 grams of goat meat

3 cloves of garlic

5 red onion cloves

5 cm galangal, sliced

1 tbsp coriander powder

3 tbsp tamarind water

3 tbsp sweet soy sauce

1 tsp salt

1 tsp stock powder

1/2 tbsp pepper

2 tbsp water

Margarine

Soy sauce seasoning ingredients:

5 red onion cloves

6 red cayenne peppers

1 red tomato

1 lime

6-7 tbsp sweet soy sauce

Steps to make:

1. Dry the meat, remove the silver skin that is attached to the meat then cut it thinly. Transfer into a bowl.

2. Blend the garlic, shallots, galangal, coriander and tamarind juice until smooth.

3. Mix the ground spices into the meat. Don’t forget to add salt, stock powder, pepper, sweet soy sauce and water, stir well. Let the spices soak for 30-60 minutes so that the spices absorb and become soft.

4. Skewer the meat with satai skewers that have been soaked in water, so that the satai skewers don’t quickly burn and break during the cooking process.

5. Heat the grill, cook the satai until slightly browned on both sides. Then spread margarine, bake until satai is cooked evenly.

6. For the soy sauce seasoning, chop the tomatoes, cayenne pepper, shallots and lime.

7. Goat satai is ready to be served with soy sauce and lime slices.
